Fall Frittata

The day before Thanksgiving.  This is the perfect time to create food for your houseguests that is simple and don’t take hours away from you – unless you want it to! 😈

INGREDIENTS

  • Olive Oil
  • 2 Small Potatoes (Red/Wax etc.), thinly sliced
  • 1 Small Garlic Clove, smashed
  • Red Chili Flakes, 1 pinch
  • 1 Tbs Butter
  • 8 Eggs, Salted, Peppered & Beaten
  • 1/4 Cup Shredded Cheddar Cheese
  • * Feel free to add some nice herbs like chives/dill/parsley

 

PUT IT TOGETHER

  • Turn on Broiler
  • Warm O.O  & Garlic Clove in a Medium, heavy bottomed sauté pan – 3 mins
  • Add Potatoes and brown – 8 minutes (If not cooking throughly – cover with a lid to steam a bit)
  • Add Chili Flakes
  • Remove Garlic, Add Butter
  • Pour in Eggs, add Cheese to top turn heat down to low
  • Cook ON and OFF heat for 10 minutes until sides are set and middle is still jiggly
  • Finish under broiler to desired finish – wont jiggle when done!
  • Turn out onto serving tray and enjoy (alone or with your guests) 😈
