Smokey Lentil Soup

This is an adaptation from the Silver Spoon bible. I didn’t have most of the ingredients so I improvised. The one thing I wish I had was a food mill to get the texture super velvety. It doesn’t matter how to you take a picture of it – it doesn’t look very good – but it tastes awesome!

INGREDIENTS:

1 Cup of Green lentils, rinsed*

One large strip of Bacon or Pancetta

2 Leeks, cleaned and finely chopped

2 Garlic cloves, smashed

a few sprigs of Thyme

Olive Oil

3 Cups of Water

1 Cup of Heavy Cream

Pinch of freshly grated Nutmeg

PUT IT TOGETHER

Heat O.O. over medium high heat

Add Bacon and render for 5 minutes

Add Leeks and Garlic, cook until they start to carmelize

Add Lentils and water, Bring to a boil, cover and reduce heat to simmer for one hour or until lentils are super tender

Remove from heat – removed Thyme twigs and bacon and Blitz in a food processor/food mill/emersion blender/blender until smooth

Whisk in cream & nutmeg and allow to sit 5 minutes before serving (with a drizzle of O.O & warm crusty bread and butter of course!)

* You can soak lentils for 3 hours before and reduce cooking time to about 30 minutes
